Since Luke was on a restricted diet (no "fried foods"), he was concerned that stir frying might not agree with his stomach. I assured him that stir frying was NOTHING like the deep fried foods that he had been restricted from eating. Stir frying in the cast iron wok requires very little oil (three "rings" around the wok is LESS than a tablespoon).
Luke cooks on a built-in gas stove and he makes a good point about adjusting the heat level depending on the quantity of food in the wok: "I also try to turn the heat down low enough to fry the chicken but not too high so that it starts to smoke". (This is one of the "tweaks" on the back of the crib sheet).
In the shrimp & asparagus dish I show on the DVD (because asparagus is such a firm vegetable), I demonstrate how to "steam fry" the asparagus to help it along. Luke likes his asparagus really firm... "I also put the asparagus in last and only for a short time when I stir fry." That's the great thing about stir-frying-- have it YOUR way
