Pineapple Stir Fried Rice

Pineapple Stir Fry Rice


Servings:

Makes 4 servings


Ingredients:

A:

1/2 lb ham in one thick slice, cut into strips, then cubed

4 cups, cold day old, white rice, break up any lumps


B:

1 cup Del Monte Gold Extra Sweet pineapple, cubed (set aside juice for sauce)

1 Del Monte red bell pepper, cubed

3/4 cup frozen peas

2 scallions, thin rounds


C:

3 eggs with dash of tamari, scrambled


D:

2 cloves garlic, peeled and diced

2 slices fresh ginger, diced


E (Sauce):

2-3 tblsp. tamari (preferable to soy sauce)

2 tsp. medium drinking sherry or white wine

dash of white pepper

Juice from pineapple chunks

2 tblsp. canola oil for frying


Directions:

As with all my creations, you can make this as simple or fancy as you want.   It's perfect for substitutions and variations.  A little of this and that turns into a huge dish, so watch out!  Best to use a deep cast iron skillet or wok and gas stove for instantaneous control and best results.  Have all preparations of ingredients ready prior to the stir fry. 


Start with hot skillet or wok.  Add 1 tblsp. of oil, then add half of D..  Fry B, adding scallions at the end, plate. 


Again, start with hot wok, add 1/2 tblsp. oil, add C and scramble keeping eggs underdone, plate next to veggies. Wash out wok. 


Start with hot wok, add 1 tblsp. oil, add remainder of D, add rice and ham.  Warm through, then add veg and combine.  Last add eggs and E and keep frying till rice comes away from the wok but still moist.
